The grapes were selected from vineyards in the south of France on three different types of soil; sandstone, limestone, clay. Each soil type brings a different element to the wine resulting in a great balance of fruit, finesse, and depth. First, the grapes are carefully destemmed, then pressing is performed progressively so that free-run and first press juices may be selected in order to obtain a pale, delicate color. The grapes from distinct plots are vinified separately so as to preserve their typicity. Fermentation is conducted at low temperatures to encourage freshness and the wines are aged on fine lees with occasional stirring.
